OK so Ive been trying to fogure out strobes and lighting etc .. I have some of it down but heres a quick question I have .. If your balancing ambient and flash during the day what do you do if your ambient metering is higher shutter then your flash sync ie .. You want to shoot at f8 or f11 but your camera meters ambient at f8 1/500th what do you do?? are you forced to raise your aperture? or would you have to use an nd filter?

You get a Nikon D70. :P

You can either change your camera's ISO or use an ND filter. All else failing, then you'll have to increase your f-stop. You're already getting lots of DOF at f11 anyways, f16 probably won't hurt. The other option is to use a scrim to diffuse the ambient light source.

A scrim is basically woven fabric (or any diffusion material in the most general sense) that diffuses the light going through it. The tighter (or denser) the weave the less light it lets through. Ripstop nylon, stormdoor mesh material, low thread count white bed sheet also works.

Go down to 1/250 f11 for ambient and then power the strobes to f11.

Done.

It'll work if the background is clean; if you're shooting in the forest, well you're screwed
