I'm on TPMG way too much

So I'm looking into purchasing a light meter .. Most likely a sekonic l-358. Now are they that much better then using the built in camera meter for ambient? or is it just beneficial when your using strobes? ..
Say your using a 2 light setup ..

1 key light into umbrella cam left and 1 fill light camera right what do you do?

Put the light meter where the subject is and fire off the key light?
say it reads f.8.. you then put your camera on f8?

then turn off the key and fire just your fill? say it reads f 8 also? won't that give you flat boring lighting? would u keep adjusting your flash until your fill read something like f6 or so? and keep the camera at f8??

is that pretty much how these things work??

The L358 meter probably offers the most bang for your $$. Pricier ones take into account colour temps and/or 1

Correction, to measure the individual light itself to set it:

Turn off all your fill/kicker etc lights, aim the meter at your LIGHT directly in front of your subject and trigger the key light. Note the meter reading.

If you're doing all the lights together THEN you point it at the camera!

If you have pocket wizards, the L-358 version with the transmitter will be useful. Cheers.

If you do not mind mail order or are going to the US. This is supposed to be great too at a lower pricepoint.
