Does the summer humidity in TO affect SLR camera sensor & lens interior component?

Would humidity cause the sensor to fog up ?

not outside. only in winter when you go to Allan Gardens

Lenses are more of an issue if you don't take care of them...fungus can grow inside on the lens surfaces, but I've never had a problem with my modern equipment that gets used all the time...my 40 year old Kodak lenses on the other hand which have been sitting around unused have grown fungus.

Toronto isn't too bad...it's not like we live in Singapore where you have to buy a drybox to dehumidify your equipment and keep it dry when not in use.
