So I have been out of photography for awhile now but a trip coming up has me longing for a camera beyond that in my cell phone. Not sure how much reply I will get as the site seems a little slow these days

As this is more for a trip than diving back down the rabbit hole of the hobby I was looking at the T6S or D3400 type cameras. However as I previously owned a D2X and D300S which were decent cameras when I owned them I am wondering how disappointed I will be in cameras of this type.

Or has Technology come along and brought these entry level cameras to beyond the capabilities of my old gear.

I am canon user myself and say entry level dslr are very good compare to the past. I started out with a SL1 which did me very well until I upgrade to Canon 6D. I depends on your focus of photography. I chose Canon for the range of lens. Nikon has better bodies I find and Sony has so great mirror less camera.

This is just my opinion.
Doing portraits or high speed I choose Canon (because of fast auto focus)

For street and landscape nikon (better quality and sensor)

For video and low light I choose sony (better dynamic range and 4k)

Wait for the D850 to be released. Apparently it's going to be a beast!

I am a Canon shooter for events and portrait (5D Mii, 5D, 7D, 35L, 70-200 F/2.8 IS, 17-50 F2.8). Because all my gear is a pain to do personal travel with I've been doing a tone of reasearch, trying out other bodies / lenses (even vintage manual), all in the name of smaller / lighter gear without sacrificing image quality / focus in lower light (and maybe even improving). After trying 11 cameras (all mirrorless) in different brands I've landed on the Fujifilm X-T2. The combination of feel in hand, lens size, lens quality have done it for me. I can't be bothered with recording in 4K, so my main focus is photography. I started looking for a new body after a trip in Feb this year, and just picked up the X-T2 a week ago. Fuji also has a try before you buy at certain rental camera stores (3 days, one body, 2 lenses, no cost only a deposit).

The newer entry level cameras don't offer a lot more than what the D300s can offer you.
You might get certain features like flip LCD , slightly faster AF ( which I doubt)
Higher resolution Video and Higher MP count.
If I owned a d300s I wont bother its just me.

Unless u want to go to mirror less coz of the portability issue.
In that case u buy the sony a7 series and that will cost you $$$$
I wouldn't bother with others.

Sony A7S doesn't give you the portability of a crop body. Sony native lenses are still heavy and when added to body negate the benefit of no mirror. In that case just look at entry level Canon or Nikon with their smallest / lightest DSLR bodies. Tech on entry level has come along way in image quality, it's just viewfinder, focus speed, and frames per second which will be lacking.

For a beginner would it be better to buy an older mid-level body or a newer entry level?
