All my current manual lenses are constant aperture.

If I get a lens that has a variable aperture setting, HOW will I know when to change the aperture as I zoom?

Sorry I don't have any experience using these lenses or using film cameras.

A variable aperture zoom lens means that the amount of light entering the lens diminishes as you zoom. Professional lenses are usually fixed aperture, part of the reason why they are more expensive. You will know if the exposure is off by looking at your exposure meter in your camera and adjust your exposure accordingly. If you are on automatic setting, the exposure is automatically adjusted. Of course, you can set your aperture manually depending on your preference.
